Watch me make vegan rice krispie treats! 1 Cup of Ricemellow 1 1/2 tsp of "butter" 3 Cups of Puffed Rice --- In this video, I use Rice Krispies as the puffed rice... but if you are a really strict vegan and you live in AMERICA you might not want to use Rice Krispies because they might have an animal derived product in them. Check for yourself to be sure... there are lots of other puffed rice products on the market though! So, I'm sure you'll find a perfect Rice Krispie substitute. Gujaratis are by far the largest Indian community overseas. So, it is no wonder that an increasing number of people are becoming aware of Gujarati food and dining. The people of the region love their snacks and have a more diverse variety in them than anywhere else in the country.

Various Kinds

Gujarati snacks consist of a remarkable range of tastes and cooking styles, and it is safe to say that there would be something to suit everyone's palette. Some of the snacks like dhokhla and khandhvi are wet and spongy; then there are cooked snacks, which are light and crispy, like khakhra; fried snacks such as kachori; and even those that have a rice-like consistency, like chevra and poha. Of course, there are the ubiquitous sweets, like the biscuit-y naan khatai, and the tempting jalebi, which is deep fried in boiling sugar syrup. Range of Tastes

As far as tastes go, khakhra, chevra, poha and a lot others are savory, and can be made mild or spicy according to taste. Dhokhla and khandhvi, arguably the most popular of all these snacks outside Gujarat, both have a very unique tangy-spicy taste. They both are made from sour yoghurt and gram flour, along with a range of spices and seasoning. Chevra andpoha, on the other hand, taste very similar to flavored or vegetable rice, much like the famous Indian Pulao.

If you actually visit Gujarat, you will not be able to miss dabeli and vada pav, which are both preparations involving buns and pungent fillings. If it helps, visualize vada pav as an Indian burger. And yes, it is not too healthy or light in terms of calories!

A Vibrant Snack Culture

If you are thinking right now that Gujaratis are obsessed with snacks, you are not wrong. They typically call their snacks Nasto, and that is a word that features at all times of the day, from breakfast to bed-time. To give you an idea, Chevra, poha and dhokhla are popular as breakfast items, khakhra and khandhvi maybe eaten as appetizers before lunch or dinner or as munchies between meals, whereas kachori andvada pav feature as evening treats.

The good thing is that if you have the right ingredients and utensils, some of these tasteful Gujarati snacks are fairly easy to prepare at home. Indian food is as diverse as its people and culture.

Devouring sweets is tradition all through the holiday season. Rather than eat refined white sugar or high fructose corn syrup, why not try some favorite holiday treats made with natural sweeteners, such as unrefined cane sugar, honey, maple syrup, and agave?

I've found that these sweeteners taste even better than sugar or corn syrup.

Here's a basic recipe for a shortbread butter cookie that can me made into many variations. I have successfully made these using

* unrefined cane sugar (such as Sucanat or Rapadura) -- this is like brown sugar
* powdered unrefined cane sugar (sold as "organic" powedered sugar -- this is like white sugar
* agave nectar -- a good low-glycemic option
* rice syrup -- a personal favorite, subtly sweet with no extra flavor

SHORTBREAD BUTTER COOKIES

makes about 2 dozen 1-inch square cookies

3/4 cup butter, softened
1/4 cup sweetener
3/4 teaspoon vanilla
1 2/3 cups whole wheat pastry flour
small pinch of salt

1. Put butter out to soften. This could take 20-30 minutes.
2. Preheat oven to 325 degrees F.
3. In a mixing bowl, with a hand mixer, beat the soft butter until fluffy. This step is important to make the cookies light and crispy.
4. Add sweetener and vanilla and continue to beat until both are incorporated.
5. Add flour and salt slowly, mixing until a stiff batter is formed.
6. Put parchment paper or a silpat on the cookie sheet.
7. Flavor and cut as desired.
8. CHILL before baking. Cover the shortbread tightly with plastic wrap and refrigerate at least two hours or up to 4 days. If you don't chill, the shortbread will spread.
9. Bake for 20-30 minutes, or until lightly browned just around the edges. Thicker cookies need a little more time, very thin cookies need less.
10. Remove the cookies to cooling racks.

VARIATIONS:

* Roll out dough and use to make cutout cookies

* Add any extract and bits of nuts, citrus peel, dried fruits, coconut, chocolate chips

* Top with spices such as cinnamon sugar

* Sandwich any plain or flavored cookies together with fruit-sweetened jam, flavored cream cheese, nut butters...

* Place dough in parchment paper, roll into a cylinder, then chill and cut as refrigerator cookies. Edges can be rolled in nuts, coconut, etc.

* Add any desired ingredients and bake as bar cookies.
